Our Mother Rosella’s Strawberry Pie

  • 1 Baked pie shell(or individual dessert shells)
  • 2 tbl. Cornstarch
  • 2 qt. Strawberries
  • 1 tbl. Lemon juice
  • 1 c. Sugar
  • A drop or 2 of red food coloring (optional)
 Our mother always used a large deep 9” pie pan, this recipe works best in a large pie pan.

Pick out about 1⁄2 of the best berries and stand them up in a baked pie crust. Mash remaining berries and add 1 cup of sugar, 2 tablespoons of cornstarch and a teaspoon of lemon juice. The food coloring can be added if you like at this time. Cook until juice is clear and thick. Then pour over berries in the pie shell. Put pie in the refrigerator for several hours before serving. Top each piece with whip cream and serve.
