Our Mother Rosella's Apple Cake

Our Dad's favorite!
  • For the Batter:
  • 3 eggs
  • 1 3/4 cup sugar
  • 1 cup oil
  • 2 cups flour
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 4-6 apples, sliced
  • 1 cup walnuts, chopped
  • For the Icing:
  • powdered sugar
  • water
  • whole walnuts nuts for garnish

Beat eggs, sugar and oil.  Add flour, cinnamon, baking soda and salt.  Fold in apples and 1 cup of nuts.  Baked in a greased 9x13 pan for 40-45 minutes at 350 degrees. Set cake aside to cool.

To ice:  Put whole nuts on cake.  Mix powder sugar and water until you have a runny icing that you can drizzle.  Drizzle over cake.  Serve warm with ice cream.
