Herb-Parmesan Crusted Tilapia

  • 2 cloves garlic, minced
  • 6 Tbs extra virgin olive oil
  • 1 14.5oz can diced tomatoes
  • 3/4 cup fresh breadcrumbs
  • 3/4 cup grated Parmesan or Grana Padano cheese
  • 1 cup chopped mixed fresh herbs )thyme, parsley, chives or oregano)
  • 4 Foley tilapia fillets
  • 1 egg
In a sauce pan, cook the garlic in 2 Tbs of olive oil over medium high heat 1 to 2 minutes. Add tomatoes and juices, and a pinch of salt and pepper. Simmer for 15 minutes, stirring occasionally.
On a large plate mix the bread crumbs, cheese, herbs and 1/4 tsp salt and pepper. Beat the egg in a wide shallow dish. Dip each fillet in the egg and then in the breadcrumb mixture.
In a large skillet heat the remaining olive oil over medium high heat. Cook tilapia two at a time so they are not over crowded 2-3 minutes per side until golden brown. Remove tilapia, set aside and continuing cooking the rest of the fillets.
Serve tilapia with sauce and steamed kale.
