Rosella McGinnis’s “No Fail” Pork Roast with Rich Brown Gravy

  • 1 pork roast (3-3 1⁄2 lbs)
  • 1 c. liquid (broth, wine or water)
  • Lawry seasoned salt
  • 1 medium onion sliced
  • Black pepper
  • 1⁄2 lb of mushrooms, sliced
  • Flour
  • 1 can Campbells’ golden mushroom soup
Place 1 tablespoon of oil in the roasting pan and heat on top of the stove. Flour the roast on all sides and season with Lawry salt and black pepper. Brown the roast on all sides. Slice one medium onion and 1⁄2 pound of mushrooms and place on top of and around the roast. Add one cup of liquid to the pan. It can be broth, wine or water. Put a lid on the pan, place in the oven and roast at 325° for 2 1/2 hours.

One hour before the roast is finished cooking spread the golden mushroom soup on top of the roast, replace lid and continue roasting. Allow roast to rest for about 5 minutes after it comes out of the oven.

Adjust time based on the size of the roast you are cooking.
