Southwest Seafood Cups

Great as an appetizer, side dish or main course
  • 1 box phyllo pastry cups, thawed
  • 1/2 pound seafood: shrimp, scallops, lobster, etc.
  • 2 green onions, sliced thin
  • Handful of snow peas, chopped
  • 1 small red pepper, chopped very thin
  • Olive oil
  • 1 teaspoon garlic
  • 1/2 teaspoon favorite Southwest seasoning
Cut seafood into very small pieces.  Toss with onions, snow peas and pepper.
Heat olive oil in pan and add garlic.  Stir until fragrant and add seafood mixture.  Sprinkle with seasoning and saute until seafood is cooked, about five minutes.  Serve in phyllo cups.
