Delicious with Red Raspberries or Strawberries
  • 3/4 c graham cracker crumbs
  • 1/8 c sugar
  • 3 tbsp melted margarine
  • 1/4 c chopped walnuts
  • 4 oz cream cheese, softened
  • 1/8 c sugar
  • 2 tbsp milk
  • 2 c Cool Whip, divided
  • 1 pt red raspberries, washed and drained (or strawberries)
  • 1 pkg vanilla instant pudding (sm. box)
  • 1 1/4 c. cold milk
Mix together the graham cracker crumbs, 1/8 cup sugar, melted margarine and nuts.  Press firmly into 8 inch square dish and bake at 375 degrees for 8 minutes.  Let cool.  Beat cream cheese, 2 tablespoons milk and 1/8 cup sugar until smooth.  Add 1 cup Cool Whip and spread mixture over the crust.  Spread the red raspberries over mixture.  Make the instant pudding according to directions, but only use 1 1/4 cup milk.  Pour into pan.  Chill several hours or overnight.  Shortly before serving spread 1 cup Cool Whip over pudding and garnish with additional berries.
